Best Lemon Bars Recipe

Lemon is one of my favorite flavors in spring. One of my families’ favorite desserts is lemon meringue pie, but I rarely make it because there are SO many steps. When I’m craving a sweet lemon dessert, I make these easy lemon bars. The recipe requires only about 15 minutes of hands on time, and the finished bars come out delicious every single time.

I made this recipe for Easter brunch, and it was such a hit, it’s been requested for Mother’s Day as well!

Best Lemon Bars Recipe

You’re going to want to double this one. I promise.

  • 1 cup finely sifted white flour (can use white whole wheat if you choose)
  • 1/2 cup softened butter
  • 1/4 cup powdered sugar
  • 1 cup white sugar
  • grated peel of 1 lemon
  • 2 tbsp fresh squeezed lemon juice
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • extra powdered sugar to garnish

Instructions:

1. Combine the flour, butter, and 1/2 cup powdered sugar in a medium mixing bowl until a loose dough forms. Press the dough into a buttered 8″x8″ pan. Bake for 20 minutes at 350°.

2. Using a mixer, beat the white sugar, lemon peel, lemon juice, eggs, baking powder, and salt, until they are thoroughly combined. This mixture should be fluffy.

3. Pour the egg mixture into the hot crust.

4. Bake the whole thing in a 350° oven for 25 minutes.

5. Cut into bars and sprinkle with powdered sugar before serving.
