Ravioli with Brown Butter Sage Sauce

 I’m always looking for easy, yet tasty dinners that can be prepared really quickly.The beauty of this brown butter sage sauce recipe is that the sauce can be made, start to finish, while the pasta cooks. This is a true 15 minute dinner!  It’s become my go-to dinner on those nights when we have sports and everyone is rushing around. I can get it on the table in T-15!

Even though the ingredients are simple and straightforward, if you use fresh sage, it will really make the flavor pop. Make sure to reserve some of the sage leaves to garnish the dish with!   I also like to grate my own fresh, whole nutmeg with a Microplane, which is one of my favorite kitchen tools.

Ravioli with Brown Butter Sage Sauce

(Serves 4)

Ingredients:

  • 1 lb Ravioli, cooked according to package directions (reserve cooking water)
  • 1/2 cup salted butter
  • 5 fresh sage leaves, chopped+ more for garnish
  • 1 tsp nutmeg
  • 1/2 cup grated parmesan cheese
  • black pepper

Instructions:

1. Boil a pot of water and cook the pasta according to package directions. Reserve 1/2 cup of cooking water after the pasta is done. Set aside.

2.  In a large sauce pan, melt the butter on low heat until the clear liquids separate and begin to brown – but well before it burns.

2. Add the chopped sage to the butter and remove from heat. Add cooking water to the mixture and stir.

3. Mix in the parmesan cheese until a thin sauce begins to form. Season with black pepper.

4. Add the cooked raviolis to the saucepan with the butter sauce, and gently toss to coat.

5. Serve in individual bowls, garnished with a sage leaf and a sprinkle of nutmeg.

This is a great stand-alone dinner, but if my family is extra hungry, I’ll serve it with some of my easy Maple Glazed Carrots or with my favorite homemade meatball recipe (that I’ve pulled from the freezer).

  4. In our house, the Mister does most of the cooking. But – when I cook, it’s almost ALWAYS some type of pasta, bread and salad. I’ve never tried this type of sauce, but it sounds super yummy and most importantly – EASY :)
