Simple Tomato Sauce Recipe with Roasted Tomatoes

We have gotten SO, SO, SO many tomatoes in our Wickham Farms CSA share. And then one day I decided that wasn’t enough so I went across the street to the Wickham Farms CSA U-pick area (just for members!) and picked about 20 more pounds of tomatoes! It didn’t take long at all, but when I came home, I realized I better come up with a simple tomato sauce recipe so I could use (and FREEZE!) all these tomatoes.

Since there were SO many tomatoes to deal with, I needed my tomato sauce recipe to be quick to throw together but mouthwatering enough so that my family wouldn’t mind eating it all winter long.

It turned out extremely simple to make, with only about 10 minutes of hands on time per batch!

Tomato Sauce Recipe

I used Roma tomatoes for my sauce, but you could really use any kind.

Simple Tomato Sauce Recipe with Roasted Tomatoes (Serves 4-6)

  • 2 pounds tomatoes, washed and quartered
  • 2-3 cloves garlic, peeled
  • 1/2 white onion
  • 3-4 leaves fresh basil
  • 2-3 leaves fresh oregano
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper


1. Combine all ingredients in a 9″x13″ glass pan. Roast at 400° for 30 minutes. It will look like this:

2. Let the roasted tomatoes cool for about 15 minutes.

3. Using a high-powered blender (I’m in love with my Blendtec), blend on low for 10-20 seconds. The longer you blend, the thinner the sauce will be. My family prefers a thick, chunky sauce, so I only blended for about 10 seconds.

4. Once you’re done, you can serve the roasted tomato sauce immediately, or freeze it for use later. I made about 10 jars to put in the freezer.
