Healthy Lunch Ideas from Weelicious Lunches + A Recipe AND A Giveaway!

Finding healthy lunch ideas day after day can be exhausting.  Whether you are bringing your lunch to the office, packing a kids’ lunch, or cooking at home, lunch is an often-forgotten meal, hastily thrown together at the last minute. I personally always plan out healthy dinners, but I rarely plan for lunch and then end up scrambling for ideas.

Weelicious Lunches to the rescue! Catherine McCord, the author of the original Weelicious cookbook, has created a book full of fun, delicious, and healthful recipes to jazz up our lunches. The best part is that all of her recipes are easy to execute with basic, healthy ingredients. And just because it’s called “Weelicious” doesn’t mean it’s just for kids. Our whole family has been enjoying the recipes in Weelicious Lunches, especially the homemade Chocolate PB&J cups — I’m fairly certain I’ve eaten more than I’ve let the kids eat!

We’ve also been leafing through Weelicious Lunches together – I love it when my son points out a recipe he would like to make together.

Speaking of PB&J, there is another fun PB&J recipe in Weelicious Lunches that we have all been digging lately, and I’m so excited to share it with you: PB&J Swirls. If you’re trying eat less sugar and carbs, this is the perfect solution to the Peanut Butter & Jelly sandwich. It’s just as easy and even more delicious.

PB&J Swirl

PB&J Yogurt Swirls, made with plain Stonyfield Greek Yogurt and sweetened with homemade jam and your choice of nut butter, is delicious and fun for any meal!  Using organic Stonyfield Greek Yogurt is the key, because it has twice the protein and half the sugar of regular yogurt.healthy lunch ideas
