Kohlrabi recipe

Last week, I asked my Facebook fans to challenge me to come up with a recipe for one of 4 unusual ingredients from my Wickham Farms CSA share. The options were:

Watermelon Radishes

Kohlrabi was the winner! So then I had to come up with a Kohlrabi recipe that would please everyone! I have made Kohlrabi Slaw before, but I really wanted a cooked preparation this time around.

I wasn’t even looking for inspiration a few nights ago when my son and I were leafing through Practical Paleo, looking for recipe ideas (what can I say, my kid loves that book!).  I found Diane’s recipe for , and thought it would be perfect for kohlrabi!

If you haven’t cooked your kohlrabi yet, you should! It was delicious, and both my kids loved it (which means it must be good!)

Here’s what I came up with, with thanks to Diane Sanfillipo of Practical Paleo  and her Red Cabbage with onions and apples recipe for the inspiration:

Sweet & Sour Kohlrabi

1 Leek, thinly sliced

1 tbsp coconut oil

1 large kohlrabi, or two medium, peeled and cut into matchsticks

3 tbsp apple cider vinegar

1 tbsp sea salt

1-2 sprigs rosemary, 1 for the leaves, 1 for garnish.

1 apple, sliced into matchsticks

1. In a large pan, sauté the leeks in the coconut oil until nearly translucent, then add the kohlrabi.

2. Add the vinegar and the salt. Continue to cook on medium for 5-8 minutes until the kohlrabi has softened.

3. Add the apples, and cook an additional 3-5 minutes. Add 1 tbsp extra vinegar. Add the rosemary.

Serve hot with an extra sprig of rosemary to garnish.
