This lemony dill hummus recipe is extremely easy to throw together, and works just as well on crackers as it does on carrot or bell pepper sticks.
My favorite grocery store recently came out with a store brand Lemon Dill hummus, and I loved it so much I had to try to recreate it. My son is always asking for crackers and hummus in his school lunch, so I came up with this healthy hummus recipe that tastes fresh and bright.
Healthy Hummus Recipe | Lemon Dill Hummus
Here’s what you’ll need to gather:
- 1 can garbanzo beans, 3 tbsp of liquid reserved (ie, don’t drain it down the sink!)
- 3-4 cloves roasted garlic or 1 small clove fresh garlic (roasted has a much milder flavor)
- several sprigs fresh dill
- juice of 1 lemon
- 1 tsp grated lemon rind
- 2 tbsp olive oil
- 2 tbsp tahini (sesame seed paste – you can buy this near the peanut butter in the grocery store)
- 1/2 tsp sea salt
To prepare your hummus, simply add all the ingredients to a high powered blender (like my new Blendtec *wink*), or a food processor. Process until smooth. Store in the refrigerator for up to a week. But it won’t last that long.
