Have you noticed I have been making a lot of purple and red recipes lately? I attribute this rosy compulsion to the proliferation of beets and blueberries that have made their way into my refrigerator in the past two weeks. Of course, my first inclination is to try out new superfood smoothie recipes!
I took home some dazzling red beets from my local CSA (Wickham Farms if you’re interested) and felt compelled to make a beautiful purpley-red drink with them.
Using only ingredients I happened to have on hand, this gorgeous concoction happened:
Blueberry Smoothie Recipe
Here’s what you’ll need to make your own:
- 1 large red beet, cooked and peeled
- 1 medium apple, peeled and cored
- 1 peach, peeled and pitted OR 3/4 cup cut up pineapple chunks
- 1/2 cup blueberries, fresh or frozen
- 1 cup water
Blend all ingredients together on the highest speed setting of your blender. If it’s too thick and not blending well, you can add a little more ice water. If it’s not thick enough, add a banana or some more apple.
