Stuffed Peppers Recipe

I will admit, I’m lucky. I have children who will actually eat what I make for dinner 90% off the time (except when we’re talking eggs, for some reason!) It makes sense, since my children come from a family of enthusiastic eaters on both sides.

Stuffed Peppers is one of those meals that I can count on my kids asking for seconds, though. They just can’t get enough! It’s such an easy recipe to pull together, it’s super-healthy, and everyone eats it! That’s a win in my book. Add this recipe to your go-to repetoire of easy dinners (Or better yet, pin it!)

Stuffed Pepper Recipe with Fresh Herbs:

  • 5-6 bell peppers, any color
  • 3/4 lb ground beef (or ground turkey)
  • 2 cloves of fresh garlic, chopped
  • 1 medium onion, finely diced
  • 1 can of Muir Glen Organic Diced Tomatoes, or 2 fresh tomatoes, diced finely
  • 2 tbsp fresh chopped parsely
  • 1 tbsp fresh chopped chives
  • 2 tbsp fresh chopped basil, plus more for garnish
  • salt and pepper to taste

1. Prepare the peppers by chopping off the tops and setting aside. Scrape out the seeds.I chop the stem out of the tops and give the edible part for the kids to eat while I’m making dinner.

2. Brown the beef in a large skillet. Add the garlic, onion, and tomatoes, and saute for about 5 minutes until heated through.

3. Add the herbs, salt, and pepper, and cook 1-2 more minutes.

4. Fill the hollowed out peppers with the beef mixture and broil in the oven on high for 5 minutes. You can add some shredded cheese to the top before you broil if that sounds good.

5. Garnish with fresh basil leaves and serve warm.

Be prepared to have no leftovers! In my mind, this is a perfect meal as is, but my husband likes it with a side of rice or quinoa.
