Greens and Beans Pasta featuring Kale and Fresh Herbs | Wickham Farms #CSA Share Week 6

Ok, so this is, like, my fourth recipe featuring Kale. But listen — I love Kale, it’s healthy, and  it just keeps coming every week!

Cooking with Beans

This week I decided to make a Greens and Beans Pasta. Normally I do greens and beans as a side dish, but this time I decided to mix everything up together. It took about 2 seconds and tasted great!  Cooking with beans is my strategy for when I forget to take some meat out of the freezer. What I like about this is that it is a one-dish meals that cooks up quickly – perfect for those busy weeknights when we have to rush off to practice or lessons after dinner.

Greens and Beans Pasta

1 pound short pasta, boiled to al dente

1 can cannellini beans I used Wegmans Tuscan Seasoned Beans and they tasted delicious. I drained them but didn’t rinse them too much because the “sauce” had a lot of flavor

2 cups of fresh kale, roughly chopped

1-2 cloves “wet” garlic (can use regular dry garlic too)

3 tbsp olive oil

Fresh oregano and fresh parsely for seasoning

shredded Parmesan Cheese to garnish

Salt and pepper to taste

Instructions:

1. Cook the pasta to al dente.

2. When the pasta is cooking, saute the garlic and kale with olive oil. Add  salt and pepper to taste.  Add the beans and warm through.

3. When the pasta is done,  drain it and place into a large serving dish. Add the kale/bean mixture and mix together. Garnish with fresh herbs and a sprinking of parmesan cheese.
