Crab Salad Recipe Featuring Kohlrabi | Wickham Farms CSA Week 3

crab salad recipe with kohlrabiMy crab salad recipe is one of those dishes I only make in the summertime. It’s a little bit fancier than plain macaroni salad, but just as easy to make. It can be a light entree or a substantial side on those hot nights when cooking sounds about as appealing as ripping out your own tooth with a pair of pliers.

This week in my CSA from Wickham Farms, I was SO excited to find some early kohlrabi  in our share! Kohlrabi is sort of a cross between cabbage and broccoli, taste-wise, but is shaped more like a turnip or radish. By far, my favorite way to eat kohlrabi is raw, cut into strips and dressed by itself with oil and vinegar or as an addition to any kind of salad.

Kohlrabi Crab Salad Recipe

Whole Kohlrabi, Peeled

We were also able to pick lots of fresh herbs, which I have been using in practically every meals I’ve made this week.  I picked chives, curly parsely, sage, and basil. Fresh herbs make anything taste 100% better.

The addition of fresh herbs and julienned kohlrabi elevates crab salad and gives it a bright crunch that is really refreshing.

Crab Salad Recipe with Kohlrabi (makes enough for 8-10 side servings)

  • 1 pound elbow pasta, cooked al dente and cooled
  • 1 10 oz package crab chunks (can use imitation)
  • 3 kohlrabi, trimmed, peeled, and julienned (cut in narrow strips – I use the Zyliss Julienne Peeler and LOVE it)
  • 1/2- 1 cup Mayonnaise (I use less, but you may prefer more)
  • 1 red onion, finely diced
  • 1 can, drained, or 2 cobs worth of fresh corn
  • 3 tsp celery salt
  • Fresh herbs to taste: I used chopped chives, parsely, and basil
  • Salt and pepper to taste

1. Combine the pasta, crab, and mayonnaise in a large bowl.

2. Add the kohlrabi, corn, and onion.

3. Stir in the salt, pepper, and celery salt.

4. Sprinkle the herbs over the top and refrigerate at least 1 hour before serving.

  1. oooh, I’ve never had kohlrabi, but I think both broccoli and cabbage, so I bet I would like this too. I’m a huge fan of crab salads too…this sounds totally delicious!
