Wickham Farms CSA Share Week 2 + Simple Radish Salad Recipe

If you’re wondering, no, that is not my kitchen. My dear friend picked up my CSA share for me this week as I was unable to due to a family emergency.

I do, however, have a delish radish salad recipe to share this week. It’s basically just marinating radishes in a mixture of balsamic vinaigrette and olive oil. I like to sprinkle my marinated radishes over a bed of greens, but my hubby will just eat them as they are, with maybe a garnish of chives or scallions.

You’ll need:

  • 3-4 medium radishes
  • 3 tbsp balsamic vinegar
  • 4 tbsp olive oil
  • salt and pepper to taste
  • Chives or scallions to garnish

Mix all ingredients together. Refrigerate for at least an hour before serving. Want to get a little fancier? Add in some feta cheese or candied walnuts.
