Father’s Day Dessert: Peanut Butter Bacon Beer Brownies

Warning: This recipe is not gluten-free. It is not paleo, vegan, or low-sodium. It will do absolutely nothing beneficial for your physical self. In fact, indulge too often in these brownies and your health is guaranteed to suffer.

But damn, they’re good.

All baked together in one crunchy, crispy, gooey mound of deliciousness. You’re welcome.

I’ll be serving Peanut Butter Bacon Beer Brownies for dessert on Father’s Day, which pretty much guarantees that even though my husband is getting a photo travel mug as his sole gift, he’ll be satisfied with one thing at least.

I was inspired by this recipe, but as usual, changed a few things to suit my needs (including my need to utilize bacon grease in every possible way). Plus, I use a box mix, which cuts out a bunch of steps.  You’ll be able to whip these up in 15 minutes, minus baking time.

Here’s what you’ll need:

  • 1 box Chocolate Brownie Mix
  • 3/4 cup peanut butter M&M’s
  • 1 egg
  • 1/3 cup chocolate stout
  • 4 pieces bacon (+ bacon fat — don’t throw out that bacon fat!)

Here’s what you do:

1. Make the bacon. I make mine in the toaster oven just because it’s easy and no-mess. Just throw a half sheet pan in there and bake for 8-10 minutes.

2. While the bacon is cooking, measure out the Peanut Butter M&Ms. Once measure, place them in a plastic bag (or between 2 towels), and pound the bejeebers out of them with a meat tenderizer. If you don’t have one, a can of beans works well, too. You just want the M&Ms crushed up.

3. Start mixing the boxed brownie mix. Add the dry mix to a medium bowl.

4. Mix in the egg and beer.

5. When the bacon is done and cool enough to handle, drain off the bacon grease into a cup. Grease an 8″x8″ pan WITH the bacon grease. Yes, sir. Now, add 1-2 tbsp bacon grease into your brownie mixture. We don’t like to waste anything bacon.

5. Fold the Peanut Butter M&M’s into the brownie mix and pour into your greased baking dish.

6. Dice up the bacon very finely and sprinkle it over the top of the brownies.

7. Bake at 350° for 35-30 minutes.

Use every ounce of restraint you possess to let these bad boys cool, then dive in and relish the decadence.
