Ice Cream Sandwich recipe

Nothing evokes summer like licking the creamy, gooey sides off an ice cream sandwich.  Here’s my secret to making these so quickly — they don’t actually have ice cream in them! But they do have real heavy cream, and they are icy cold. Plus, my children love them, so this is a fun and easy ice cream sandwich recipe that you can make any time!

My ice cream sandwiches are easy and fast to make, plus the kids have lots of opportunities to help. You COULD make your own ice cream, which I do often, but sometimes I like to skip a step. In that case, in lieu of ice cream, I use heavy whipping cream with whatever add-ins I can find. Sometimes it’s simply some vanilla and sugar, other times it’s cocoa powder and blueberries.

Spread the mixture between graham crackers (this is the part the kids love to help with), and freeze. It’s that simple to come up with a fabulous crowd-pleasing dessert.

Here’s what you need:

  • 1 sleeve of graham crackers
  • 1/2 pint of heavy whipping cream
  • 2 tbsp sugar
  • 1 tbsp vanilla extract (real, not artificial)

1. Whip up the heavy cream until it’s light and fluffy. Stonyfield makes a delicious organic whipping cream. It should take a few minutes on medium in a stand mixer to get the cream whipped up.

2.  Add the sugar and vanilla to the whipped cream. Whip again on medium for about 30 seconds.

3. Spread the cream between two graham crackers. Repeat with all the crackers.

4. Freeze in a single layer for at least an hour. I set all the sandwiches on a cookie sheet and stuck that in the freezer.

Take out and enjoy. Yum!
