Banana Oat Muffins Recipe

Just because there are no eggs and no white sugar in this Banana Oat Muffins Recipe does NOT mean there is no flavor. On the contrary, these muffins turn out moist, somewhat chewy (just enough to be pleasantly toothsome), and easy to eat alone or spread with butter or homemade jam.

There are a ton of Banana muffin recipes out there, but this is my family’s absolute favorite. I make these as a doubled batch and put them in the freezer for quick snacks or for easy grab and go breakfasts.

Yes, the recipe contains white flour. Other than that, it is pretty darn healthy. Flaxseeds and oats provide fiber. The muffins are sweetened naturally with bananas and antioxident rich local honey.  They are so moist, they don’t taste like “health food.” They’re just yummy!

Here’s what you need to make Banana Oat Muffins (makes 12, but you may want to double the recipe):

  • 1 1/4 cup white flour
  • 1/2 cup oats
  • 1/4 cup honey
  • 2 1/2 tsp baking powder
  • 3/4 tsp salt
  • 1 tbsp ground flax seeds
  • 2 tbsp water
  • 3/4 cup milk – feel free to substitute any non-dairy milk if you prefer OR 1/2 cup creamy greek yogurt
  • 1/3 cup vegetable oil
  • 2 ripe bananas, mashed

What to do:

Combine the flour, oats, baking powder, and salt in a large bowl.

In a pinch bowl, combine the flaxseeds and water as an egg substitute.

In a stand mixer, combine the egg substitute, milk, oil, and bananas. Mix until combined.

Slowly add the dry flour to the wet ingredients in the mixer. Mix until just combined. Do not over mix.

Bake in greased muffin tins for 15-20 minutes at 375.

  1. can I use an egg instead of the flax and water?

    • You absolutely can use an egg. It just won’t be “egg-free” (obviously!). :) Let me know how they turn out!

  2. In your directions you never say when to put in the honey. I’m assuming it’s with the egg subsitute, milk, oil and bananas. I’m going to try this recipe. It sounds good!

  3. I made them but I replaced the white flour with organic 100% whole wheat flour and vegetable oil with cocoanut oil. I also added a tsp of vanilla extract. I sprayed the muffin tin with cocoanut oil spray. you can taste the grain of the wheat but it’s sweet!
