Cheap & Green in 2013: Tangy Lemon Chia Seed Vinaigrette

Now that we’ve had 2 sunny days in a row in Rochester, NY, I’m starting to hanker for delicious salads made with freshly picked greens and produce. I’m happy to toss together a quick salad of chopped veggies dressed with a fresh homemade vinaigrette.

Lately, since I’ve been trying to incorporate more superfoods into my diet, I substituted chia seeds for poppyseeds in my favorite vinaigrette. It tastes delicious and fresh, and I love that I’m getting all the health benefits of chia seeds.

Chia seeds are full of healthy omega-3s, fiber, antioxidants, and protein. Unlike flaxseeds, they are digestible in their whole form, and actually expand in liquid (or in your digestive tract), making you feel fuller.

I’ve been making this Lemon Chia Seed Vinaigrette all the time lately, and loving it. Try it with my Easy Weeknight Tomato Salad or Radish Salad.

Lemon Chia Seed Dressing

Ingredients

  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tbsp chia seeds
  • salt and pepper to taste

Instructions

  1. Whisk all ingredients together.
  2. Toss with salad of your choice until coated.
  3. Store in refrigerator.
