Meal Plan Monday!

Welcome back to Meal Plan Monday! I’m working on a series to help you save money, save time, and eat more healthfully by planning your weekly menus.

The great thing about this week’s menu is that, aside from the chicken and Applegate Farms hot dogs, everything I need for these meals is something I already have in my pantry!

So I figured I better get back on track myself! Here are our dinners for the week:

Monday: Chicken Sausage & Applegate Farms Hot Dogs, grilled veggies, and Cascadian Farm “tater tots.”

Tuesday: Spaghetti with Meat Sauce (my son’s favorite) with homemade dinner rolls

Wednesday: Crock Pot Enchiladas with shredded chicken, beans, and corn

Thursday: Basic Beef Stir Fry — Cubed beef, stir fry veggies, and teryaki sauce over rice

Friday: Pizza Night! with  green salad and carrot sticks

  1. Here’s my menu plan:

    Monday – Grilled portobello mushroom, eggplant, & red pepper with fig goat cheese panini with sweet potato fries

    Tuesday – Spicy chicken thighs with rhubarb salsa and roasted tomatoes/mini sweet peppers

    Wednesday – Chili glazed tofu with vegetable brown rice

    Thursday – Chicken with Thai peanut sauce, broccoli and brown rice

    Friday – Jamaican spiced tilapia, hearts of palm salad, black beans and baked plantains

    Saturday – Black bean burgers with chips and/or salad

    Sunday – Swedish meaballs with mashed potatoes & peas
