Make It Yourself: Peanut Butter Granola Bars

I can’t have the only family that is obsessed with Kashi granola bars. Seriously, my kids could eat a box a day. A 6-pack retails for $2.99, though sometimes I can find them on sale for $1.75 with a coupon. Also, even the Kashi ones, though generally healthy, are processed. So I set out to make my own. I wanted to make something healthful and filling, but with enough yumminess that my kids would eat them!  After a few unsuccessful attempts (one of which my son bit into, chewed, and promptly spit back out on the plate), I think this recipe hits all my requirements.

Make It Yourself: Peanut Butter Granola Bars

Ingredients

  • 1 cup oats (any kind, but steel-cut are best)
  • 1/2 cup raisins, chopped
  • 1/3 cup walnuts, finely chopped
  • 1/3 cup finely shredded organic coconut
  • 4 tsp wheat germ
  • 1/2 tsp salt
  • 1/4 cup peanut butter
  • 1 mashed ripe banana
  • organic brown sugar to sprinkle on top

Instructions

  1. In a medium mixing bowl, mix together all the dry ingredients (except the brown sugar)
  2. In a small mixing bowl, whip together the peanut butter and banana until completely combined
  3. Add the peanut butter banana mixture to the dry ingredients, and combine thoroughly, till the mixture is of a uniform consistency
  4. Spread the mixture in a 1/4" thick layer in an 8x8 baking pan. Sprinkle the top with brown sugar
  5. Bake at 350F for 20 minutes
  6. Let cool and cut into strips
