I’ve decided to do something a little different this week to see if it works a little better. Last week, due to several random things, my meal plan was completely shot — to the point where one meal involved Wendy’s drive-thru and another involved PB&J. After that fiasco, I resolved to try to plan more for the unknown, and have a specific plan with easy substitutions I can make in case I run out of time or life gets in the way.
Monday: Chicken Stiry Fry with Veggies and Noodles
Tuesday: Goulash and homemade bread.
Wednesday: Pizza and green salad
Thursday: Steak, squash, and biscuits
Friday: Pasta with meat sauce and green beans
Saturday: Chicken Soup (already in the freezer)
Sunday: My daughter’s birthday party is today! We’re having a cookout (yeah, in the middle of January!) More about the menu later this week.

I understand your need for back ups. My week last week, was almost all back ups and reassessing the situation. I tried to do the same thing when I planned things out this week too. Looks like a good plan!
